Tex Mex Breakfast Scramble (THM Deep S)

I’ve fallen in love with this breakfast and can’t get enough of it.  I’ve even made it for supper.  I can’t get over just how easy is it to make (literally less then 5 minutes from start to finish) and how satisfying is it.

I have no problem with this meal holding me a full three+ hours until my next meal.  This can be a struggle for me so I’m always happy to find a meal that makes this a non issue.

Tex Mex Breakfast Scramble

Recipe:

1 tbsp Coconut Oil (or butter if you prefer to fry in that)

1 medium Zucchini (washed and diced with skin on)

3 pieces Deli Ham (diced) or any meat of choice.

1/4 tsp Cumin

1/2 tsp Chili Powder (not the hot kind)

1/4 tsp Onion Powder

1/4 tsp Garlic Powder

Seasoning of Salt & Pepper (to taste preference)

2 Large Eggs

Instructions:

  1. Dice up your zucchini (leave skin on).
  2. Melt coconut oil (or butter) in frying pan. Use medium heat.
  3. Put diced zucchini in frying pan with all the seasonings (cumin, chili powder, onion powder, garlic powder, salt and pepper) and fry until zucchini and spices are well blended.
  4. Immediately add diced ham to the zucchini and fry until zucchini is starting to become soft (cook longer if you prefer your zucchini quite soft).
  5. Remove zucchini scramble from pan and place on a plate.  Remove pan from heat just for a minute while you get the scramble eggs ready.  Do not clean pan yet as you’ll be using it to scramble your eggs.
  6. Break two eggs into a bowl and scramble (add nothing to the scrambled eggs) and pour into the frying pan that the zucchini scramble was in (set to medium heat).  Cook and Scramble in pan until done and transfer on top of your cooked diced zucchini.
  7. garish with your favorite hot sauce (or leave bare if you prefer).
  8. Eat it up!! YUM
