Garlic Basil Zoodle Pasta (THM S)

I was craving a feed of noodles and garlic of any some sort :-)…. However eating low-carb means I have to be creative….. So I  got creative.   I’m so glad I did…. This was exactly what I  was looking for.   So savory and filling.  This spiralized zucchini dish filled my deep noodle need!!!

Ingredients
3 Tbsp Butter
1 Pound Ground Pork,  Beef, Chicken,  or Turkey
6 Large Garlic Cloves
½ Cup Diced Fresh Basil Leaves
3 cups of Fresh Baby Spinach
1 tsp of Sea Salt(to be added to recipe)
4 medium zucchinis
2 tsp of salt(for Zucchini to reduce liquid)

Recipe

Spiralize zucchini and salt with the 2 tsp of salt, set aside to let liquid drain from zucchini.
1. Melt butter in large frying pan.
2. Add garlic,  fry until translucent.
3. Add Basil, and salt fry until completely wilted.image

4. Add Spinach,  fry until completely wilted,  stir to coat well with garlic and butter, set aside.

5. Now go back to the spiralized zucchini that is draining.  Give those a good rinse with water, and set aside to drain once more.

6.  Fry your ground meat adding salt to season to your preference.image
7. In the large frying pan on medium heat, add spiralized uncooked zucchini to basil and garlic mixture,  stir well then add meat mixing well.   Heat until Zucchini is warmed but still El Dente.

8.  Serve with a nice big salad of your choosing and enjoy! 🙂
