Red Pepper Italian Meat Loaf (THM S)

This hearty Italian inspired meatloaf is the perfect main on your plate for supper tonight.  Quick and easy to whip up, with money saving ingredients, will make this meatloaf a ‘must have’ on your meal plan rotation.

My kids begged for seconds, but to their dismay I only made a 1 pound meatloaf, just enough for my family of four.  Next time I will double this recipe 😉

Ingredients:

3 Ryvita Crackers
1 whole egg
1/4 cup unsweetened Almond milk
2 tsp garlic powder (or 2 cloves minced)
1 tsp onion powder
1 tsp parsley
1 tsp oregano
1/2 tsp Smoked paprika(or regular)
1/2 tsp salt
1/2 pepper
1 pound lean ground beef
3/4 cup of red peppers diced

Crush Ryvita cracker to make a lose crumble.

Add egg and almond milk, mix thoroughly.  Let set for 5 minutes for the crackers to soak up the liquid. (About 5 minutes)

Add all the spices and seasonings to the thicker mixture

In a larger bowl add your 1 lb of lean ground beef, add diced peppers, and sauce mixture.

Combine well.

Place in loaf pan.  Bake at 350 for 45 minutes.

Cut and serve.

Bake:  350 degrees for 45 mins

3 Ryvita Crackers
1 whole egg
1/4 cup unsweetened Almond milk
2 tsp garlic powder (or 2 cloves minced)
1 tsp onion powder
1 tsp parsley
1 tsp oregano                                                                                                                                        1/2 Smoked paprika(or regular)
1/2 tsp salt
1/2 pepper
1 pound extra lean ground beef
3/4 cup of red peppers diced

1- Crumble Ryvita crackers into medium sized bowl, add egg and almond milk, mix thoroughly.  Let set until liquid has absorbed into the Ryvita creating a thick sauce consistency (About 5 minutes).

2- Add garlic powder, onion powder, parsley, oregano, paprika, salt, and pepper to Ryvita mixture.  Mix well.

3- Combine Ryvita / spice mixture to hamburger and diced red pepper in larger bowl,  mix well by hand.  Form mixture into a loaf pan.  Bake for 45 minutes in preheated oven set to 350 degrees.
