I’ve always loved Zucchini Bread.  I really enjoy how moist it always stays even a full week after it’s been made.  So I missed not being able to warm a couple pieces up in the morning to have with a coffee.  But it didn’t take me long to perfect this recipe.  I love working with the THM Baking Blend.  It’s really superior to all other gluten free baking mixes.

Strawberry Lemon Thumbprint Cookies (THM S)

These little treats come out so soft, and moist.  They pop with the flavors of Strawberry and lemon, and come together brilliantly in this cookie.  They have a soft cakey texture and are a bit addictive, so be careful to not eat the whole tray.  Fresh, bright and sweet.  A lovely afternoon treat. Tex Mex Breakfast Scramble (THM Deep S)

I’ve fallen in love with this breakfast and can’t get enough of it.  I’ve even made it for supper.  I can’t get over just how easy is it to make (literally less then 5 minutes from start to finish) and how satisfying is it.

I have no problem with this meal holding me a full three+ hours until my next meal.  This can be a struggle for me so I’m always happy to find a meal that makes this a non issue.

No Shake Balsamic Vinaigrette (THM S)

I’m going through a real balsamic vinaigrette phase currently.  I just love drizzling a salad with such super food like olive oil and balsamic vinaigrette and eating it up….I honestly could lick my plate clean it tastes so good.  But I wouldn’t of course (yeah right!)

FP (Fuel Pull) Dessert Round Up

It’s so easy to always turn to those Heavy S, decadent, yummy, cream cheese delicacies for dessert , as they’re so darn tasty and they don’t leave us feeling at all like we’re on a diet. Peanut Butter Cup Frosting

This frosting is so so delicious.  I made this up, scooped up a large spoonful, walked through my house to find my husband.  As he saw me coming with a spoon I told him to close his eyes and open his mouth.  I had him taste this frosting ….he opened his eyes and they widened, he smiled largely swallowing than he blurted “Wow!  That tastes better then a Reese’s Peanut Butter Cup”.    Yes!!!  I love making food, the person I love making it for the most is my husband, when he loves it I do a little victory dance.  If you like this frosting as much as my hubby and kids do than I’ll do another victory dance just for you too!! ❤ Continue reading

One Bowl Chocolate Fudge Cake (THM S)

I have to come clean…..I’ve just eaten this for breakfast while I finalize this post.  It’s that good!! lol

This One Bowl Chocolate Fudge Cake (with a dairy free option) is super easy to make, and extra nice to clean up.  I don’t know about you but since starting THM (read my testimony here) I’ve been on double dish duty, so making a THM dessert that’s tasty, moist, fudgy AND super easy to clean up is a very welcome change indeed.

#Disclaimer ….you do indeed have to wash the two round pans you bake this in as well! Lol
